Dorm room rice and chili beans with a salad

 

The dorm room rice and beans struck early this new year! My first cooked meal of the year (technically) came to us as a quick dinner option after a reasonably busy day.

Today's version consisted of:

  • 1 cup white rice
  • 1/2 cup textured vegetable protein
  • 1 can (15.5 oz) chili beans, not drained
  • 1 tsp Better than Bouillon seasoned vegetable base
  • 1/2 cup frozen corn
  • topped with some dried parsley and a sprinkle of Tajín seasoning


Also chopped up a quick salad with romaine, tomato, cucumber, red bell pepper, celery, mozzarella cheese, balsamic vinegar, extra virgin olive oil, salt, and black pepper.
