The dorm room rice and beans struck early this new year! My first cooked meal of the year (technically) came to us as a quick dinner option after a reasonably busy day.

Today's version consisted of:
- 1 cup white rice
- 1/2 cup textured vegetable protein
- 1 can (15.5 oz) chili beans, not drained
- 1 tsp Better than Bouillon seasoned vegetable base
- 1/2 cup frozen corn
- topped with some dried parsley and a sprinkle of Tajín seasoning
