Scallion Sichuan Noodles and Fried Tofu Kimbap from Costco

 

A Costco finally opened within 30 minutes of me, so I had to scope out the noodle situation. I was not disappointed with the selection at all! We stocked up on a bunch of essential noodles and Asian goodies.

My first lunch from the Costco haul was the PaMi Zeng Scallion Sichuan Pepper noodles. The instructions on these said to cook them in boiling water, but I went the lazy route and microwaved them for 8 minutes in a giant container to avoid spillovers. The noodle texture was great this way - nice and chewy but easy enough to bite through. The sauce though, wow! My lips were tingling and my tongue was slightly numb, but I couldn't put the bowl down from start to finish. These were gone in less than 2 minutes. For reference I used the entire pepper sauce packet and added some sliced green onions. 


To eat with the noodles I added a roll of the frozen pre-sliced kimbap. Super easy as well, microwave for 2 and a half minutes and let it cool. I ate this with some soy sauce mixed with Sriracha. The numbing from the noodles actually enhanced the flavor of these, it was a great pairing!
