Romanian white bean dip with pitas and Mediterranean salad

 

We keep making this, so simple and satisfying.

This is such a simple recipe, but it’s so satisfying and comforting. We used pre-made sweet onion pitas this time, microwaved to soften them up. The Mediterranean salad was just to use up extra ingredients, and it was a winner as well.

You'll need:

    For the dip:

  • 2 cans of white beans - I used cannellinni
  • 4 tbsp olive oil
  • 4 tbsp tahini sauce
  • 2 tbsp minced garlic
  • 1/2 large white onion, sliced
  • 1 small tomato
  • 2 tbsp tomato paste
  • 1 tsp smoked paprika

    For the salad:

  • 1/2 large cucumber, diced
  • 1/2 cup white beans
  • 3 small tomatoes, diced
  • 1/2 large white onion, diced
  • 2 tbsp olive oil
  • 4 tbsp lemon juice
Instructions:

  • Drain and rinse beans well, keep 1/2 cup to the side
  • Start caramelizing sliced onion over low heat with olive oil until tender, this takes a while
  • For salad, mix all diced ingredients with 1/2 cup beans, add olive oil and lemon juice, season with salt + pepper, store in fridge until ready to eat
  • Add remaining beans, olive oil, tahini, and garlic to blender
  • May have to do this in batches depending on blender size
  • Adjust consistency with water - I aim for smooth hummus
  • Salt + pepper to taste
  • Scoop dip into wide bowl
  • Spread caramelized onions evenly over dip
  • Cook tomatoes over med heat until softened, add tomato paste, salt, pepper, and paprika until fragrant, put on top of onions in the center of the bowl


Extra toppings stretch this simple dish into fancy territory

Caramelize some sweet or white onions and temper some tomato paste to really elevate this dip. It makes it feel very luxurious and gives some nice pop to the flavor profile.
