Red beans and sausage over rice


Blue Runner at it again, I make this once a week.

Usually it's on a Monday, as is traditional for some reason. This one was on a Wednesday, blame my wife for that one I guess?

You'll need:

  • 1 can (16 oz) Blue Runner Creole cream style red beans
  • 1 can (15.5 oz) dark red kidney beans, drained and rinsed
  • 1/2 link (6-8 oz) smoked sausage, diced
  • 1 cup (uncooked) rice of your choice, cooked and ready
  • salt + pepper to taste
Instructions:
  • Cook sausage in saucepan over medium heat with a bit of oil until lightly browned
  • Add can of Blue Runner red beans, fill can to 1/4 with water, swirl around, add to pan
  • Add drained and rinsed dark red kidney beans and stir to combine
  • Reduce heat to low and simmer, covered, for 10 minutes
  • Adjust consistency with water, season with salt + pepper to taste
  • Serve in a wide bowl with rice on top, garnish with dried parsley and hot sauce

Original or spicy - it doesn't matter, they're both delicious. Sure I can soak some beans, pressure cook them, smash them up with a spoon until I get the perfect consistency, season to perfection. That takes hours, and why? So I can brag to all of my friends and family that I can? Blue Runner does it all for me. In a saucepan and on the table in 15 minutes. Perfect every time. Add some hot sauce and you're in heaven.
