Dirty rice with a side of green beans

 

A pretty quick weeknight meal, made from a box mix that's difficult to mess up even for kitchen amateurs like myself and tastes great as a side or by itself!

You'll need:

  • 1 (8 oz) box Tony Chachere's Dirty Rice box mix
  • 1/2 to 1 lb ground beef - I used 1/2 lb 80/20 chuck
  • 2 1/4 cups water
  • 3-4 stalks green onion
Instructions:
  • In a small pot with a lid over medium heat, cook the beef in olive oil until done
  • Drain off the excess fat and add the contents of the box, mix well, add the water
  • Simmer over low heat for 20-25 minutes, covered, or until the rice is tender
  • Serve with your choice of vegetable to make it a meal, or alongside a main!



The green beans were just steamed in the microwave for 4 minutes, and I added about a tablespoon of butter and sprinkle of salt. I also added some chili beans topped with some fresh diced tomato to add a bit of variety and nutrition.



I used to eat some variation of these box mixes as a kid all the time. My parents both worked full time (or more!) so quick and easy dinners like these were a staple in our household. There are a bunch of brands of them, Zatarain's being the other most popular. I find them both great, but the Tony's has a tiny bit more kick to it.
