Burrito bowls with rice, black beans, and chicken

 

Simple, quick, tasty weeknight meal for 2. There was even extra but our 5 year old wasn't having any of it.

You'll need:

  • 1 lb boneless skinless chicken thighs, cut into strips
  • 2 instant yellow rice cups, or 1 instant rice pouch
  • 1 can (15 oz) seasoned black beans
  • 1/4 cup shredded fiesta blend cheese
  • 2 small tomatoes, diced
  • 1/4 cup shredded lettuce
  • hot sauce or taco sauce of choice
  • sour cream

Instructions:

  • Over medium heat, cook the chicken until done and becoming crispy on the edges, season with salt + pepper
  • Microwave the instant rice according to the package instructions
  • Drain a bit of the black beans liquid, pour the rest into a bowl, cover with a paper towel, and microwave until warm
  • Plate it up: add rice and lettuce at the bottom of a wide bowl, add beans and liquid in the center, stack cooked chicken around the beans and top with cheese, tomatoes, sour cream, and taco sauce
