So I was going to call this tonkatsu, but after realizing I didn’t have panko breadcrumbs and pounding the pork chops so flat they burned like paper in the shallow oil fry, I quickly pivoted to calling it a pork cutlet and served it with french fries. The Not Just Steak Sauce did act as a katsu sauce stand in pretty well though. This was still pretty great.
